Unpasteurised honey, also known as raw honey, is preferred by some because it retains more of its natural enzymes, antioxidants and pollen which can be beneficial for health. Pasteurization, on the other hand, heats the honey, which can reduce these beneficial components and alter its flavor and texture.
Unpasteurised honey crystallises because it is a natural supersaturated solution of sugars (glucose and fructose and water. The glucose being less soluble than fructose, tends to separate from the solution and form crystals.This is a natural process and doesn’t mean the honey has gone bad. To make crystallised honey runny again, gently warm in warm is key.
